Chuck’s first restaurant opened in Hawaii in 1959 and introduced America to the concept of the grill & salad bar in the dining room. Customers loved the informal, high value concept. Chuck’s has had a long established solid reputation across the country. Today, there are Chuck’s Steak House’s stretching from Guam and Hawaii in the Pacific, east to Florida and north to Massachusetts. Chuck’s in Auburn opened in 1978 and Margaritagrill was added in 1982. Tom Flynn & Steve Londregan started in 1979 shortly after the opening as waiters while attending Holy Cross. Upon graduation in 1980 they were made part of the management team. In 1986 the founders decided to sell the individual restaurants to select managers and Tom & Steve were the first. They were then again the first to be offered the real estate in 2000. Tom & Steve continue to be part of the day to day operation.

The success of the restaurant all starts with our beef purveyor who painstakingly selects the very best USDA Western choice beef. This superior quality will always ensure a high degree of marbling, the essential ingredient responsible for the terrific flavor of our beef. He then carefully controls the aging process in the warehouse, and when the beef is ready, the he distributes it to Chuck’s. Our beef is always fresh and the steaks are cut daily on premise. Another vital part of our success are our longtime loyal customers as well as the great staff. Our fantastic location and constant on hands ownership approach is also extremely important.

The awards we have won over the years are extensive. They include best restaurant, best steaks, best salad bar, best service, best salsa and best Mexican from a number of different publications and organizations. While our nearly 38 year run has been very rewarding & successful it does require constant attention and tweaking to the consumers needs. We have recently made a huge change at the restaurant. After operating “Two separate restaurants under one roof” for 30 years we listened to the public and now offer “everything everywhere”. We have combined our menu, logo, dining rooms & staffs into one. This was a project that started in the summer of 2013 . We redecorated the lounge and dining room and what used to be the Margaritagrill dining room is now a function room for parties up to 90. The need for meeting space in Auburn is great. This room complete with its own fireplace is the perfect spot for holiday gatherings, bereavements, family celebrations, corporate events, award dinners etc… We had over 130 events in the room in 2015 alone.

Once again, we feel the informal, high value, high quality concept has never been stronger, our Mexican items are all homemade and our steaks and seafood are fresh and cut daily on premise.
